Houston's Spinach and Artichoke Dip

 

Houston’s is one of my all-time favorite restaurants. It is always consistent, always tasty and always has great service. What’s odd is that I have been to Houston’s hundreds and hundreds of times and had never tried this dip. I remember celebrating my oldest sister’s high school graduation there. I remember celebrating many birthdays there for myself and family. All that time and I had NEVER tried their spinach-artichoke dip. One of the possible reasons is that my dad is very allergic to artichokes, but you’d think I would have tried it at some point.

Anyways, it is to die for. I am obsessed with it. I figured there’s no way it can be ok on a low carb diet, but I looked and it is totally fine! It’s actually great for keto because it has some good fats in it too. You can serve with tortilla chips or celery, but I chose to make some Fat Head Dough Crackers to serve along with it. Y’all, these crackers are so good and I cannot believe they’re like 1 net carb. My husband told me that he thinks they’re better than normal crackers. They’re SO flavorful. Give them a try!

Ingredients:

  • 1 jar of marinated quartered artichoke hearts (6.25 oz)

  • 2 cloves of garlic

  • 1 cup shredded mozzarella cheese

  • 3/4 cup parmesan, asiago, romano mix shredded cheese

  • 2 tablespoons of cream cheese

  • 10 oz of frozen chopped spinach

  • 1/3 cup heavy cream

  • 1/2 cup sour cream

Directions:

  1. Preheat your oven to 350 degrees F. Combine the drained artichoke hearts, garlic, cream cheese, mozzarella and cheese blend in a food processor. Blend for about 45 seconds until the large chunks are broken down but not too smooth.

  2. Add the artichoke mixture into a mixing bowl and add in the heavy cream, sour cream and spinach. (If your spinach has not defrosted yet, microwave for a minute or two and then drain off ALL excess water). Mix together thoroughly and then pour into an oven safe dish. This is the one I used!

  3. Bake on 350 degrees F for 25 minutes until you start to see some bubbling. Serve with sour cream on the side and some tortilla chips. If you are trying to stay low carb, serve with Fat Head Dough Crackers like I did. Enjoy!
