Quick & Easy Bruschetta Dip
I love bruschetta. It is such a good party food because everyone loves it. The only problem is that the bread usually gets soggy when you prep too far ahead of time. I also don’t want to be constantly stacking and refilling snacks during a party. I started to make this is a dip so that people can serve how they prefer and at their leisure with no impact on the crispiness of the toasted bread. I present to you….bruschetta dip!
Ingredients:
- 2 pints cherry tomatoes, quartered 
- 2 balls of fresh mozzarella, diced 
- 1/2 teaspoon garlic salt 
- 1/2 teaspoon pepper 
- 1/2 cup of sliced fresh basil 
- 1/2-3/4 cup of extra virgin olive oil 
- 2 tablespoons balsamic vinegar 
- 1 fresh baguette, sliced and toasted 
Directions
- Quarter the cherry tomatoes and pop into a square baking dish. 
- Add in the mozzarella, basil and all seasonings. Mix to combine. 
- Top with extra virgin olive oil and balsamic vinegar and toss to combine. 
- Let sit in the fridge for at least 30 minutes to meld the flavors together. You could also bake this dish at this point if you’d like, but I prefer it to be cold!
